Following Around the World in 80 Dishes part 1/2 , we’re happy to bring you the second and final part of these series, featuring some of the most representative dishes from different regions around the world.
Reading the comments left on the first part of the article, I was happy to realize that food continues to be one of the great sources of inspiration and cultural exploration during fashion a la carte many people’s travels. I am also proud that most of the dishes mentioned in the series are down-to-earth foods, fashion a la carte that most people would be able to come across or afford in each country (some of the submissions even include photos of home-made goodies). Food should be a straight forward affair, accessible to all who are hungry, that is, ALL OF US!
It is my all-time favourite dish of the Portuguese Culinary selection, and one which I regularly cook for friends as a way to show them what Portugal is all about. For me this Portuguese Seafood Rice recipe is all about using seafood that actually tastes like the sea, and the absolute base of every Portuguese stew; organic onions, garlic, chillies, peppers and bay leaf. This is what I love more about Portuguese fashion a la carte cuisine, it is simple, yet not plain. It is unpretentious and humble enough to bring family and friends together for a celebration of food. With a handful of accessible ingredients, one can achieve tremendous depth of flavour without having to spend endless hours in the kitchen, or spending a fortune on exotic ingredients.
This festive-looking dish is a famous Russian salad called pad shooboy which literally translates as “under the fur coat”. The essential ingredient here is salted herring that’s hiding under a thick fur coat of fresh onions, boiled eggs and cooked veggies – potatoes, carrots and beets. Beets are what give the salad this bright purple color.
All ingredients are cut into tiny pieces or graded and are organized in layers, softened and bound by another essential ingredient – mayonnaise. You may have not known this about Russian cuisine, but it uses enormous amounts of mayo. From hearty and very filling salads to baked meat – we love our mayo and add it to everything. That’s why Russia is the largest producer and consumer of mayonnaise in the world. Between multiple brands and the variety of additives, there are literally dozens fashion a la carte of options of mayonnaise one may come across in a store: olive, paprika, lemon, dill and classic flavours – just to name a few.
Because it takes over four hours from start to finish to make this dish, it is usually prepared only for special occasions – New Year’s celebration being one of them. I can’t think of a year that we’ve skipped this tradition in my family. Living in Toronto now, I’m willing fashion a la carte to drive for an hour one way just to get all the right ingredients from a Russian store. The salad in the pictures is my 2014 edition.
When it comes to a country as ethnically diverse as Malaysia, choosing one representative dish is no easy task. With Chinese, Indian, and Malay populations, each with their own cuisine (not to mention some interesting fusion dishes), it s hard to select one dish without feeling like you re neglecting 99% of what dining in Malaysia has to offer.
Caveats aside, if you only have the time or stomach space for one dish in the culinary melting pot that is Malaysia, you d better make it laksa. A hearty and incredibly flavorful soup that resulted from the marriage of Malay and Chinese cooking, there are actually two versions of the dish. Tons of space. Loads of light. Natural materials. No gimmicky nonsense. The Finca Cortesin is certainly luxurious old warsaw buffet and is regularly rated one of the best hotels in Spain but steers clear of glitz and any sort of look-at-me showoffiness. It is at the western (posh) end of the Costa del Sol, just beyond Estepona and near Sotogrande, but set back from the coast in the hills below the hilltop white village of Casares. When I arrived, I was invited to go and sit on the terrace and have a glass of cava, fino, beer or whatever I fancied, with some tapas, straightaway. Nice touch, as it gets you into the Andalucian vibe from the minute you sink into one of the comfy chairs in the shade of ancient olive trees.

There was a lot to see, what with one thing and another, as I inhaled the fragrance of the jasmine wafting up from below.

The pool that my terrace overlooked is 35 metres of glittering dark green tiles, surrounded by loungers with a shady bar and restaurant at one end. Puerto Varas may very well be the Portland of Chile. It s lush. It rains a lot. The town is steeped in Chile s Germanic history buffet golden corral yet laid back and modern. It’s a hip town that has gone green, as in organic vegetables and environmentally conscious peeps. And recently, it has joined the rankings of a serious foodie town. For only having a permanent population of 15,000, there are a lot of great joints, gourmet restaurants, artisan breweries, cheese, and sausage makers to delight residents and visiting foodies. You know exactly what I will be doing when not off trekking up a volcano or fly fishing: exploring the food.
On my last pass through Puerto Varas in March, I lunched at a favorite local picada , Donde el Gordito . Inside the old municipal market, this narrow, petit eatery seats no more 25 diners. The place reminds me of my great aunt s living room: elegant yet slightly weathered wooden chairs, dainty curtains, ornate hand-painted plates. Foreign bills and coins, left as tips by tourists, are pegged to the wall.
The owner Gordito , affectionately meaning chubby in Chilean speak, welcomes you with a warm look in the eye. He invites you into his restaurant, which feels more like his home. It s really cozy. Tables are tight so you may rub elbows with your neighbors. No worries, everybody is here for the same thing: honest food and good vibes.
When Gordito asks if you would like a pisco sour , please, do not even think about it. It’s a no brainer. As he shakes up these potent lemony cocktails, his wife will take your order. The menu at first glance has a dizzying amount of options. buffet golden corral Just stick to the seafood–or buffet golden corral steak. Although everything on the menu is incredibly fresh, Gordito s brother, Alejandro, is the fish monger next door and reels in ethereal sea bass, hake, sea urchins, salmon, clams, and oysters every morning.
Standouts are the towering gut bomb bistec a lo pobre, seared steak on top of a mountain of french fries, caramelized onions with a fried egg; the paila marina , a sort of Chilean bouillabaisse; a creamy chupe, casserole with crab or abalones; trout from the lake; for the adventureous, a plate of intense sea urchin tongues; and their most decadent creation, the grilled corvina, sea bass, with a crab sauce. Made with copious butter and cream and flambeed with a shot of cognac, the half a pound of fresh crab (per serving) is stirred in with a only a little salt to enhance flavor. When this hit the table, I had a flashback to old school recipes from the 1950s. Then it hit me, wow, it’s totally post modern!

I am not for depending intensive but since it is a time of music festivals few days ago I decided to give me a dinner show at the Castle Peralada (Girona). It was my first time. Heaping with a giant mound of shrimp and octopus, the Tostada Mixta was more than big enough to be a meal. Whole shrimp and chopped octopus makaronisalaatti were tastily mingling with avocado, tomato and sliced makaronisalaatti red onion. Hefty pieces of cucumber decorated the outer edges.
This makaronisalaatti ceviche had small chunks of shrimp and octopus tossed with finely diced tomato and cucumber. Thin slices of red onion and chopped cilantro round out the blend of ingredients. All of this was tossed in a refreshing vinaigrette that was alive with the flavors of citrus and vinegar. It’s a perfect dish for summer.
This dish of gargantuan propotion was accompanied by a mountain of buttery rice, a heap of french fries and a griddle toasted roll topped makaronisalaatti with a buttery garlic spread. Both shrimp and octopus were tender. But, the octopus was especially so. It was so light and tender the pieces almost dissolved under the pressure of our tongues. Those bites of octopus were the first things to disappear off of this giant platter. It was pure pleasure to eat.
We finally got our office group over to Mariscos La Riviera Nayarit for lunch, with my wife joining us. For drinks, three of us ordered lemonade, the pineapple juice and horchata. The fellow who ordered the pineapple juice was not sure if he s like it, so the waitress makaronisalaatti was kind enough to bring half a glass to the table as a sample . I ordered the horchata and my only complaint was that by the time I was finishing it, the ice was making it watery. These were huge drinks!
We noticed there was a filete vegetariano on the menu, which was encouraging for those who prefer veggies. Not being a fish lover I was tempted to go for that, but I ended up with the filete crema de hongos (pardon my Spanish if I got that wrong), which was a tilapia fillet topped with mushroom sauce. I think all the dishes we ordered were $15.99, which is pricey for lunch.
The tilapia was grilled and so tender it just about fell apart at the touch of my fork. This was NOT Mexican food as I knew it. It was rather bland, so I just had to drizzle some of that wicked salsa picante on the tilapia, much to the amazement of my table-mates. (A note about that I did warn them about the salsa, but they claimed I had not. It is every bit as hot as you ve heard, but when used properly, makes the dish much more interesting.)
My wife had the piña rey, half a pineapple cut out and filled with a mixture of shrimp, octopus (maybe squid), shell fish, peppers, mushrooms and onions. The pineapple flavor is what made the dish, in my opinion. (The serving was so large, she couldn t finish it, so I just HAD to help her out!)
Across from me was an order of grilled shrimp. It came with a sauce which, makaronisalaatti I m told, tasted like ranch dressing, and went better with the salad and fries than the shrimp. For the shrimp, she poured out some Mexican ketchup black-label Valentina sauce in a bottle on the table and dipped her shrimp in that.
Every plate was served with fries, salad, and toasted bread. The salad was disappointing, a chunk of lettuce with other veggies stacked around it. We asked for some dressing and the waitress was happy to bring some to the table.
There were live musicians. They played several songs for one table before we left. It was not very crowded, but then it was Thursday afternoon. And it was certainly family friendly with several couples bringing kids.
It was pricey for lunch. But, as one person said, she wanted to return at night and see what the place is like then. Everybody enjoyed it and decided we want to return but not before our next paycheck.

Tonight will be spent in Cape Town, our new mistress, this time in a beautiful, divine and wonderfu


Some years ago I discovered Thailandesa in Phuket Island, a beach that was not marked on any map and known only by word of mouth, was called NUI BEACH which translated into Spanish means "Secret Beach". At that point I decided that someday share all my secrets, all my knowledge with my people, my family, my friends. My goal is to entertain and enjoy it if you have the chance of my tips ....

Climb Table Mountain, spend a day at the beach in Camps Bay, eating a delicious monkfish in Parangas, driving a Ferrari convertible on Chapmans Peak Drive, walk with the penguins at Boulders Beach, watch the whales go through Simonstown, surfing Clifton Beach, make skimming over the waves on a Huey Cobra helicopter of the Vietnam War, see a football match at Green Point, walking distance to the Cape of Good Hope, visit the vineyards of Stellenbosch, see sunset at sea aboard a catamaran with a glass of champagne, wander around the V & A Waterfront, enjoy the sunset from Hout Bay and also a million things avokado katkarapusalaatti ....
The Belthazar is known for several things, first, I think, is his HUGE wine list, we're talking more than 400 references that can be taken by the glass, unusual for this type of business.

It may sound snobbish, but the work is first sommelier underrecognized tremendously misunderstood and second place. Landing in sunny San Diego just a little before noon, I was picked up and taken straight across the

But, thanks to inflight wifi, and a chance, online meeting preparation olives with my friend Superman (a.k.a., Pipsqueak, who, despite preparation olives the rumors, grew up in Minneapolis, and not on a farm in Kansas, after he was rocketed to Earth from Krypton), by the time I landed, I had a dinner date lined up (with Mama Superman) and a place to stay (the Superman homestead).
While The Bachelor Farmer topped my Minneapolis list, it topped many others’ as well, including Bon Appetit Magazine’s , which happened to name it one of the ten Best New Restaurants of 2012 that very day. So, not surprisingly, the restaurant was fully booked (with a line out the door) when I called.
We went to Stewart Woodman’s restaurant, Heidi’s, instead, and had a lovely meal in its funky dining room, a mix-match of graffiti-style and installation art. The nine-course tasting menu was divided between classic, Continental cuisine, like an amazingly tender piece of beef tenderloin – smoked, and sauced preparation olives with foie gras beurre rouge – and decidedly Asian dishes, like pickled beef tongue , with soy sauce and shiitakes, and fried sweetbreads , glazed with an Asian barbecue sauce and served atop gingered rice. At the end, there was a fantastic sweet cream ice cream , full of fresh strawberries, “churned,” table-side, with liquid nitrogen, and topped with pistachio praline.
There are few things preparation olives more entertaining than having your friend’s childhood narrated to you by his mother. So, after dinner, Mama Superman walked me back in time through the family album, showing me photos of Superman at age three, with cowboy boots on the wrong feet (that’s how he preferred to wear them, she said), and Superman in his little league hockey uniform, and Superman’s first showing in culinary school.
When my friend Villa Vixen called me earlier this year to ask for advice on organizing a fundraising dinner (she’s on the board of Words Alive , a nonprofit, early literacy preparation olives program in San Diego), it seemed pretty clear to me what she should do: call Christopher Kostow, who’s mother also serves on the board of Words Alive, and ask him to cook a dinner in La Jolla with his mentor Trey Foshee at Foshee’s restaurant, George’s at the Cove, where Kostow preparation olives used to cook. And, that’s exactly what she did.
To thank me for dropping that tiny bit of advice, which I was happy to do, Villa Vixen invited me, along with our friends Chuck Eats and Adam of A Life Worth Eating , to be her guests at the dinner. I decided to make a weeklong preparation olives trip of it, and explore the region while I was out there.
Landing in sunny San Diego just a little before noon, I was picked up and taken straight across the border to Tijuana, Mexico by Trey Foshee and his wife, the lovely Madame X. We spent the afternoon crawling from one taco stand to the next, focusing on fish tacos, a specialty of Baja California preparation olives (the ones here are always battered and fried, never grilled), and assorted mariscos (seafood), like a soy saucy octopus ceviche at Mariscos Ruben, and delicious, smoked marlin tacos at Mariscos Becerra on the beach (what a wonderful way to use an otherwise undesirable fish).
Sadly, I find most tacos al pastor dry, filled with shaved jerky and unripe pineapple. But the pork on the spit at Taqueria “el Franc,” near Tijuana’s Cultural Center, looked particularly juicy, sizzling with fat as it turned . So, we sat down and ordered a couple. Here, they dredged the tortillas through a trough of drippings and let them fry, lightly, on the griddle, before filling them with the meat, onions, cilantro, and a dollop of guacamole. These were far from the most attractive tacos al pastor I’ve seen, but they certainly were among the most delicious.
We ended the night at Misión 19, Javier Plascencia’s modern, preparation olives fine dining restaurant, the only one of its kind and caliber in Tijuana. preparation olives There, we were served local, artisanal Mexican cheeses , and – of all things – foie gras , something which you can no longer get across the border in California.
